Huo Shan Huang Ya (霍山黄芽) is one of China’s famous yellow teas.  It is produced in the Dabie Mountain area within Huo Shan County in Anhui Province. The region’s subtropical monsoon climate and abundant clouds and mist create ideal conditions for slower leaf development, resulting in more complex and concentrated flavor and aroma.

Crafted from a local, heirloom tea cultivar known as Jinjizhong, this rare tea is known for its yellow-green leaves, sweet aroma, and clean, mellow flavor. Savor the lightly nutty notes of roasted peanuts balanced with soft vegetal undertones of sweet green beans. It has a profile similar to green tea, but is a little more mellow and smooth. 

The production of yellow teas is distinct from other teas. After pan-firing, the leaves undergo the signature step of yellow tea production, known as Men Huang (Sealing the Yellow). This step involves a controlled resting phase that gently oxidizes the leaf. It is labor-intensive and requires great skill from the tea master.  The result of this process softens any grassy notes and produces the tea’s unique mellow and smooth character. The tea is finished with a gentle charcoal roast in a bamboo tray which adds a toasted depth and warmth. Certified Organic.

Brewing Guide
Use 3 g (1 heaping tbsp.) per 6 oz (175ml) of water. Heat water to 185º F. Let steep 2-3 minutes. Yellow teas can usually yield 3-4 infusions. Adjust amount of leaf, brewing time and water temperature according to your personal preference.
